Grammy's Lemon Yogurt Cheesecake (YUM!)

1 8-oz. carton lemon yogurt
3 eggs

1 pint small curd cottage cheese
1/2 cup sugar
1/4 cup flour
1 tsp. pure vanilla extract
1/2 tsp. salt

2 tsps grated lemon peel
2 Tbsp lemon juice
Cookie Crust (recipe below)
Powdered sugar

Blend yogurt and eggs in a blender.
Add cottage cheese, sugar, flour, vanilla, and salt.
Whir until smooth.
Stir in lemon peel and juice.
Pour into pre-baked cookie crust.
Bake in 350 degree oven for 1 hour or until toothpick inserted into center comes out clean.
Cool.
Store in refrigerator.
Sprinkle powdered sugar on top before serving.

Cookie Crust:
Blend together 1/2 cup flour, 2 Tbsp sugar, 3 Tbsp butter, and 1 egg yolk until crumbly.
Press into bottom of 8-inch springform pan.
Bake at 400 degrees for 10 minutes.
