Grammy's Carrot Cake

1-1/2 cups salad oil
2 cups sugar
4 eggs
1 tsp. salt
2 tsp. cinnamon
2 tsp. baking powder
2 tsp. baking soda
2 cups flour
3-1/2 cups grated carrots (1 lb. bag)
2 cups chopped walnuts

Grease and flour pan(s).
Blend oil and sugar together in mixer.
Add eggs and beat well.
Sift flour and all dry ingredients together.
Add to sugar mixture and mix well.
Stir in carrots and nuts.

Bake 1 hour in a 9x13-inch pan or 3 round pans.

Frost with cream cheese icing.
