Artichokes Au Gratin

2 cans water-packed artichokes
2 cloves garlic, minced
1/4 cup butter
2 Tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
1-1/2 cups milk
1 egg, slightly beaten
1/2 cup shredded Swiss cheese
1 Tbsp. dry bread crumbs
paprika
Saute the artichokes and garlic in two Tbsp. butter in a skillet.
Transfer to a greased casserole dish.
In the skillet, melt the remaining butter.
Stir in flour, salt, and pepper.
Gradually add milk.
Bring to a boil and cook for two minutes or until thick.
Remove from heat.
Stir a small amount of hot mixture into egg; return all to pan.
Stir in cheese until melted.
Pour over artichokes.
Sprinkle with remaining cheese, bread crumbs and paprika.
Bake at 400 degrees for 20-25 minutes.
Makes 4 to 6 servings.
