Mystery Pudding

My Mom gave me this recipe and my children loved it. They call it mystery pudding because people generally can't guess what's in it.
1 cup flour
1 cup sugar
1 tsp. baking soda
dash of salt
1 egg, slightly beaten
1 can (no. 2) fruit coctail and syrup
3/4 cup brown sugar
1/2 cup chopped nuts
whipped cream
maraschino cherries
Sift together flour, sugar, and soda three times.
Combine with egg, fruit cocktail and syrup from fruit cocktail.
Mix thoroughly.
Spoon batter into greased pan 8-1/2 inches square.
Combine brown sugar and nuts.
Sprinkle over batter.
Back at 350 degrees for about 45 minutes or until a wooden toothpick inserted in the center comes out clean.
Serve with sweetened whipped cream and maraschino cherries.

Artichokes Au Gratin

2 cans water-packed artichokes
2 cloves garlic, minced
1/4 cup butter
2 Tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
1-1/2 cups milk
1 egg, slightly beaten
1/2 cup shredded Swiss cheese
1 Tbsp. dry bread crumbs
paprika
Saute the artichokes and garlic in two Tbsp. butter in a skillet.
Transfer to a greased casserole dish.
In the skillet, melt the remaining butter.
Stir in flour, salt, and pepper.
Gradually add milk.
Bring to a boil and cook for two minutes or until thick.
Remove from heat.
Stir a small amount of hot mixture into egg; return all to pan.
Stir in cheese until melted.
Pour over artichokes.
Sprinkle with remaining cheese, bread crumbs and paprika.
Bake at 400 degrees for 20-25 minutes.
Makes 4 to 6 servings.

Homemade Noodles

Brrr! Cold winter days call for some comfort food. Here's my Mom's recipe for homemade noodles:
1 beaten egg
1/2 tsp. salt
2 Tbsp. milk
1 cup flour
Combine. Roll very thin.
Let stand 20 minutes. Slice 1/4" wide.
Let dry two hours.
Drop into boiling soup or salted water.
Cook 10 minutes.

The Work of Reconciliation

Henri Nouwen said, "What is our task in this world as children of God and brothers and sisters of Jesus? Our task is reconciliation. Wherever we go we see divisions among people - in families, communities, cities, countries, and continents. All these divisions are tragic reflections of our separation from God."

"The truth that all people belong together as members of one family under God is seldom visible. Our sacred task is to reveal that truth in the reality of everyday life. Why is that our task? Because God sent Christ to reconcile us with God and to give us the task of reconciling people with one another. As people reconcile with God through Christ we have been given the ministry of reconciliation" (see: 2 Corinthians 5:18). "

"So whatever we do the main question is, Does it lead to reconciliation among people?"

Merry Christmas to All!

It's finally here! We have waited in anticipation for Christmas to arrive and now we can celebrate the birth of Jesus! Our family came together early to share how the Hope of the World has brought hope to us.

My son and his family arrived from Kentucky with their two small sons. My two daughters and their families met us at an island retreat. We stayed in an old military mansion that was used for naval officers during the Pig War. As they said in Fiddler on the Roof, it had one winding staircase just going up and another one just coming down.

With eight grandchildren ages 10 to 1 (six of them boys!), you can imagine the noise and mayhem. It was wonderful! We feasted and visited for four days and now I'm home catching up on quilting projects. Hope your day tomorrow is full of the joy of the Lord.

Pacific Northwest Storm Victim

The storm has taken a heavy toll here. Several people died when trees fell on their homes or cars. One woman drowned when a flash flood filled her basement to the ceiling.

Please pray for Don Holmes and his family. Don was in an accident at their home yesterday afternoon here in Bellingham, Washington.

He was in the back yard cutting a tree when it sprang back, striking him and knocking him unconscious. His family was unable to find him until 7:30 pm, suffering from hypothermia. In addition, he has a collapsed lung and damaged vertebrae, leaving him paralyzed from the waist down. He is currently in St Joseph hospital with family, and may possibly have surgery next week.

Don still has his sense of humor, but his life will likely be very changed as he may need to remain in a wheelchair. Please pray for Don, for his wife Barbara, and for the doctors as they deal with this trauma.

His is not a story you will read of in the newspapers, but this wonderful man and his wife's life will be forever changed by this windstorm.

Grammy's Whipped Cream Cinnamon Rolls

  1. Scald one cup of milk.
  2. Add 6 Tbsps shortening, 6 Tbsps sugar and 2 tsps salt.
  3. Dissolve 2 pkgs yeast in 1/2 cup lukewarm water.
  4. Cool to lukewarm and add 3 eggs and the yeast.
  5. Gradually beat in 5-1/2 cups flour.
  6. Use 1/2 cup of flour to knead and flour your board with.
  7. Let rise for 1 hour or until double in bulk.
  8. Divide dough in half and roll out on a floured surface to 1 foot square.
  9. Spread with softened butter and sprinkle with cinnamon mixture (1/2 cup sugar, 1 Tbsp cinnamon).
  10. Place in greased square pan thatis at least 2" deep.
  11. Let rise until double in bulk.
  12. Whip a pint of whipping cream, sugar to taste, add 1/2 tsp vanilla.
  13. Spread over rolls.

Makes delicious dinner rolls without the cinnamon and cream.

Grammy's Chocolate Mousse

6 Tbsp strong coffee
4 Tbsp cognac or brandy
8 oz. sweet chocolate
1/4 cup super fine sugar
2 cups heavy cream
1 Tbsp superfine sugar
1/4 tsp vanilla

Pour coffee and cognac (or brandy) into a double boiler. Add chocolate and heat. After chocolate is melted, stir until the mixture is well blended.

Add sugar and continue stirring over heat until mixture is glossy. Let mixture cool.

Make creme chantilly by whipping heavy cream until very thick. Beat sugar and vanilla into cream.

With rubber spatula, slowly and thoroughly blend chocolate mixture into cream.

Cover and regrigerate. Serves 6

Grammy's Lemon Yogurt Cheesecake (YUM!)

1 8-oz. carton lemon yogurt
3 eggs

1 pint small curd cottage cheese
1/2 cup sugar
1/4 cup flour
1 tsp. pure vanilla extract
1/2 tsp. salt

2 tsps grated lemon peel
2 Tbsp lemon juice
Cookie Crust (recipe below)
Powdered sugar

Blend yogurt and eggs in a blender.
Add cottage cheese, sugar, flour, vanilla, and salt.
Whir until smooth.
Stir in lemon peel and juice.
Pour into pre-baked cookie crust.
Bake in 350 degree oven for 1 hour or until toothpick inserted into center comes out clean.
Cool.
Store in refrigerator.
Sprinkle powdered sugar on top before serving.

Cookie Crust:
Blend together 1/2 cup flour, 2 Tbsp sugar, 3 Tbsp butter, and 1 egg yolk until crumbly.
Press into bottom of 8-inch springform pan.
Bake at 400 degrees for 10 minutes.

Grammy's Play Dough

1 cup flour
1 Tbsp. vegetable oil
1 cup water
1/2 cup salt
2 tsp. cream of tartar

Combine in a saucepan.
Cook till mixture forms a ball.
Knead until smooth.

Wind Storm

Talk about nasty weather! Last night it was cold, raining hard, and the wind blew up to 70 miles an hour. Windows were blown out of buildings, bricks were blown off buildings, major bridges were closed as waved washed over them, tall Douglas Fir trees fell on cars and homes (at least one person died). The power is still out for over 1 million people. It was out on Concourse A at the airport. Planes couldn't land. The only problem I had was being out of flour and wanting to bake my Christmas cookies; didn't want to go out in the storm to go to the store. Things are calm this morning, so hopefully cookie baking can happen tonight. Check out my recipes on this blog. I'll add more later. They are the best that I've collected in the last half century.

Winter Blues

Here in the gray and rainy Pacific Northwest just about everyone suffers from the winter blues. Here are some essential oil recipes that chase away the blues.

These oils help relieve the blues:
bergamot (do not use on your skin)
frankincense
geranium
jasmine
lavender
melissa
rose

Here are 5 essential oil recipes to chase the blues. Put the drops in olive oil and rub on the rims of your ears, rub into your feet, or just inhale the fragrance.

Blend #1
5 drops geranium
10 drops neroli
15 drops grapefruit

Blend #2
10 drops bergamot
2 drops rose
5 drops clary sage

Blend #3
4 drops neroli
8 drops immortelle
3 drops mandarin

Blend #4
5 drops angelica
8 drops geranium
6 drops bergamot

Blend #5
10 drops grapefruit
10 drops geranium
5 drops mandarin

If you are "blue" for more than two weeks and if these oils don't lift the blues, it's important to go see a doctor. Hope you feel better!

Grammy's Alphabet Cookies

1 cup butter
1/4 cup powdered sugar
1-1/2 cups sifted flour
1/2 cup oats
1/4 tsp salt
1 tsp. vanilla

Mix butter and sugar slowly.
Add oats and flour. Mix well.
Add salt and vanilla.
Take about 1 teaspoon dough. Roll into long strip like a fat pencil
Make into a letter. Place on greased cookie sheet.
Bake for 15 minutes at 325 degrees.
Dip in powdered sugar.

Grammy's Turtle Candies

9 to 12 ounces pecan halves
2 cups light cream
2 cups sugar
1 cup light or dark corn syrup
1/2 tsp. salt
1/4 cup butter or margarine
1 tsp. vanilla
1 pkg. (12 oz.) semisweet chocolate pieces

Arrange four dozen groups of 4 pecans on cookie sheets.
In a large heavy saucepan, heat the cream to lukewarm.
Pour out one cup. Reserve.
To the remaining cream in the saucepan, add the sugar, stir constantly over moderate heat until mixture boils.
Very slowly, stir in the reserved 1 cup cream so mixture does not stop boiling.
Cook and stir constantly for 5 minutes.
Stir in butter, about 1 teaspoon at a time.
Turn heat low.
Boil gently and stir constantly until temperature reaches 248 degrees on a candy thermometer or until a small amount of mixture dropped into very cold water forms a firm ball that does not flatten on removal from the water.
Remove from heat.
Gently stir in vanilla. Cool slightly.
Pour about 1 tsp. of the slightly cooled caramel mixture over the center of each group of pecan halves, half covering each nut -- to resemble turtles.
NOTE: If the last of the carmel gets too thick to spoon over the last of the nuts, just place it over hot water until you can manage it.Let cool about 10 minutes.
Melt chocolate without stirring over hot (not boiling) water.
Stir until smooth.
Spread over each turtle candy.

Aunt Gwennie's Fudge Brownies

Delicious brownies from a beloved aunt:

1/2 cup butter
1 cup sugar
1 tsp. vanilla
2 eggs
2 1-oz. squares unsweetened chocolate, melted
1/2 cup sifted flour
1/2 cup chopped walnuts

Cream butter, sugar, and vanilla
Add eggs and beat well.
Blend in chocolate.
Stir in flour and nuts.
Bake in an 8"-square pan at 325 degrees for 30 to 35 minutes.

Grammy's Dream Bars

My Mom's been making these since we children were small!

Mix 1/2 cup butter, 1/2 cup brown sugar, and 1 cup white flour to a crumbly mass. Pat in shallow pan 8x13 inches. Bake in a moderate oven for 10 minutes.

Mix 1 cup brown sugar, 2 eggs, 1 tsp. vanilla, 2 Tbsp. flour with 1/2 tsp. baking powder. Layer over mixture in pan.

Layer over 1-1/2 cups coconut and 1 cup chopped walnuts

Bake for 20 minutes in a 350-degree oven.

Grammy's Cream Cheese Icing

8 oz. cream cheese
1 lb. powdered sugar
1/2 cup softened butter
2 tsp. vanilla.

Cream cheese and butter with a wooden spoon until smooth.
Add vanilla and powdered sugar.
Beat until smooth.
Sprinkle iced cake with nuts, if desired.

Grammy's Carrot Cake

1-1/2 cups salad oil
2 cups sugar
4 eggs
1 tsp. salt
2 tsp. cinnamon
2 tsp. baking powder
2 tsp. baking soda
2 cups flour
3-1/2 cups grated carrots (1 lb. bag)
2 cups chopped walnuts

Grease and flour pan(s).
Blend oil and sugar together in mixer.
Add eggs and beat well.
Sift flour and all dry ingredients together.
Add to sugar mixture and mix well.
Stir in carrots and nuts.

Bake 1 hour in a 9x13-inch pan or 3 round pans.

Frost with cream cheese icing.

Grammy's Apricot Coffee Cake

Soften 2 packets of yeast in ½ cup warm water.
Combine ½ cup sugar with ½ cup butter, ½ cup scalded milk and 2 teaspoons salt. Stir to melt butter and cool to lukewarm.
Blend in 3 unbeaten eggs and the softened yeast.
Add 5 to 5-1/2 cups all purpose flour gradually to form a stiff dough.
Knead on floured surface until smooth and satiny (3 to 5 minutes). (To knead you fold dough over itself and push with palms of hands. Repeat rhythmically, turning dough ¼ way around each time.)
Place in greased bowl and let rise until light and double in size (1 to 1-1/2 hours)
Combine 2/3 cup sugar, 2 teaspoons cinnamon, 1 cup chopped walnuts.
Cut up some dried apricots with scissors and cook with some sugar in water. Drain.
Roll out half of dough to a 20x10-inch rectangle.
Spread with soft butter and sprinkle with the above mixture.
Spread with cooked apricots.
Roll it up and seal the edge with a little milk and pinch together.
Place on cookie sheet seam side down. Arrange in a circle.
Cut the circle almost to the center every 1 to 1-1/2 inches.
Bake at 350 degrees until golden brown.

The F.G.O.D.

My grandaughter Mary tells me she now has an F.G.O.D. on the farm.
What's that?
A flying goose of death.
It seems a white Canadian snow goose flew over the farm, saw all the good grub and decided to stay. First thing she did was leap up and bite the biggest sheep's behind. She held on for all she was worth, flapping her wings while the sheep ran for its life. The goose seems bent on educating everyone on the farm about who is top dog, er, goose.

The War on Christmas

The Seattle Times reports:

The holiday trees that went away in the middle of the night are back.

Monday night, Port of Seattle staff began putting up the trees they earlier had removed from Seattle-Tacoma International Airport. The trees had come down Friday night after a local rabbi requested that a Hanukkah menorah also be displayed, and Port officials had said the threat of a lawsuit left them without enough time to consider all the issues."

Hooray for Christmas! The grocery clerk who put my bags in my car sang, "It's the Most Wonderful Time of the Year" to me. What a merry, merry time of year this is. Merry Christmas to everyone!

Goodbye Christmas Trees

The Seattle Airport removed all of its Christmas trees. Seems a local rabbi wanted an 8 foot tall menorah erected and the airport couldn't do it logistically. So "to be fair" they removed all of the Christmas trees. PLEASE STOP THE WAR ON CHRISTMAS!

Christmas is a national holiday people. Christmas trees are a part of our heritage. They bring joy and merriment to people. Even the rabbi is upset that they are gone.
